Periodical UV-B radiation hormesis in biosynthesis of kale sprouts nutraceuticals

The objective of the present study was to evaluate periodical UV-B radiation hormesis during kale seeds germination in their main content secondary metabolite compounds (phenols; glucosinolates; total antioxidant capacity –TAC–) and changes a refrigerated shelf-life. doses received were 0, 5, 10, 15 kJ m−2 (CTRL, UVB5, UVB10, UVB15) where 25% applied on 3rd, 5th, 7th, 10th sprouting day. UV did not affect morphological development sprouts. UVB10 UVB15 treatments increased phenolic (>30%). Likewise, TAC by lighting ~10% (DPPH) ~20% (FRAP). hydroxycinnamic acid UVB15-treated sprouts 52%, while UVB5 reported an increase 34% kaempferol-3,7-di-O-glucoside concentration, compared CTRL. After 10 d at 4 °C shelf-life, gallic hexoside I 55 78% UV-untreated sprouts, respectively. Glucoraphanin glucosinolate found seeds, followed 4-hydroxy-glucobrassicin, whose biosynthesis enhanced (~24 ~27%) (~36 ~30%), respectively, In conclusion, low illumination represents useful tool stimulate phytochemicals as important source bioactive with potential health benefits.
